What is Agave Nectar Anyway?

By keeping your eyes and ears open you can learn something new in the food industry practically every day! The ever-popular Domino Company has produced an incredible sweetener made from the nectar of the succulent Agave plant. This plant is native to Mexico. Domino has grown an organic blue agave, which produces quality nectar. Just 2/3 cup of Light Agave Nectar equals 1 cup of granulated sugar, and all liquid ingredients would be reduced by 1/4 cup to 1/3 cup. Incredible! They have found something pretty progressive and controversial, too. They make a second variety called Amber Agave Nectar and 2/3 cup is the same as 1 cup of brown sugar, and liquids are reduced by 1/4 cup.

National Milk Chocolate Day

Today is National Milk Chocolate Day and it’s celebrated in every bite of Hershey’s Chocolates. Hershey’s was started by Milton S. Hershey in 1894 when he started using chocolate to cover his caramels. By 1905, he was using a large supply of milk from the local dairies, to make his famous milk chocolate. His company is located in Hershey, Pennsylvania where it is visited by millions of chocolate lovers every year. There is a factory with tours and a world famous amusement park. At Hershey’s Park you and your kids can have a good time, relax, eat plenty of delicious chocolates and learn how they do what they do best. Make chocolates.

Locally Produced Farm Fresh

Orchards provide their nearby communities, counties, and states with freshly-grown fruits, vegetables, and herbs. Many of them share their premises with other farmers to sell their eggs, meats, poultry, cheeses, butters, and ice creams or yogurts. As you walk along the rows of shelving you’ll see jars and containers filled with syrups, jams, jellies, sauces, spices, and seasonings. I find my husband lingering among the hot sauces, candies, pies and cakes. Often there is someone offering little tasting portions for the shoppers to try. It’s just one of the reasons that makes a visit to an orchard a fun trip to take with the children, plus they love getting to pick their own berries.

Over the past six or seven weeks there were cherries and strawberries, too, to be picked by shoppers. This month blueberries are plentiful and picking time is from mid-morning until about 1 PM. This year at Butler’s Orchard it’s “one of their biggest crops ever!”

Buying locally helps to insure the livelihoods of our local farmers, who depend upon us to purchase their produce and support their way of life. Our country was founded by millions of settlers who planted, grew, harvested and rotated their crops. They grew large families and everyone had a job to do as soon as they were old enough to help. Farming was a major way of living and supporting one’s family over the last centuries. That is until modern technology, fast-paced transport and lightning-speed communications became the norm. We import foods from around the world, and while it’s lovely to enjoy exotic tastes, we must remember that our nation’s farmers have been reduced by about 70%! Those families who choose an agricultural life and offer their crops to us are precious to our way of life, too. We all depend upon each other and buying from them versus buying imported, is the support they need.

Here are some of the photos I took on our last trip to our local orchard. Hopefully you will be encouraged to find one in your area and buy farm fresh directly. When we do this, it saves them having to share their profits with the grocery stores. Nice! We all win. There is an interesting site I found which explain sustainable living and farming. How To Portion Our Foods

The NEW news about  a healthy eating guideline was announced yesterday. First Lady Michelle Obama is fighting to change not only the way we eat, but the way we feed our children, the elderly, and anyone else sitting down to eat with us. We have become a nation out of control. She pushes for lots of brightly colored and green leafy vegetables, and plenty of fresh fruits as the mainstay of our diet. It ends with putting heavy emphasis on ingesting less animal protein and smaller amounts of dairy products. What used to be the standard has helped get us to an unhealthy place.

From 1943 to 1956 the food groups were portioned, as we see in the diagram below. Later we were taught to choose our foods from a pyramid with less fat, and more carbohydrates … but that wasn’t the correct mix either. In the U.K. (see example below) they have switched to a healthy eating plate, and this was a bold movement in getting on the right track.

The plate to our left shows good choices and smaller portions. By cutting back and balancing the food groups, by learning and using the new guidelines, we may feel good about influencing our family’s health. Who’s going to teach everyone to implement these positive changes? The teachers are us, the cooks in the family, so it’s vital we step-up-to-the-plate and begin serving intelligent choices, ultimately leading those we care for toward a life of fittness.

As you can see the food choices are rearranged so we may still eat the foods we love and enjoy. We really need to make mindful decisions to change our eating patterns, exercise, and talk about this to our families, neighbors and friends. Let’s help our First Lady spread the good news about a healthier lifestyle.

Our Members Love Mexican Food And Cinco de Mayo

Did you know that Cinco de Mayo is actually an American Civil War holiday? It is not to be confused with Mexico’s Day of Independence from Spain, which is celebrated on September the 16th. On the night of September 15th, the church bells are rung to remind the Mexican people of their ancestors’ cry for freedom. Originally the Fifth of May was celebrated mainly by Mexicans and Latinos living in Pueblo and in California. It was a celebration of Mexican pride and heritage. It symbolized the Mexican army’s unlikely defeat of the French soldiers, sent by Napoleon III in 1862 to demand repayment from the Mexican town. Each year this holiday grows in popularity and it is now celebrated throughout many states. Just like Saint Patrick’s Day, on Cinco de Mayo everyone can celebrate.

Mexican food is varied, spicy and flavorful, with lots of peppers added for heat, because they like their cuisine enhanced with plenty of spices. Corn-based flatbreads are turned into tortillas, chips and tacos. Whereas, wheat flour is used to make burritos, empanadas, soft tacos and fajitas. Chicken, beef and seafood dishes always make an appearance and many are flavored with the fabulous leafy cilantro.

Tequila is a popular liquor served either straight-up or in a mixed cocktail. A very popular drink is the Margarita. It is made using tequila, triple-sec, fresh sliced limes and crushed salt. But you’d better drink them slowly as they are very potent! They are a natural pairing with Mexican fare, which is vibrant with color and dances on the palate.

Candy Nuts and Coffee

February 15th was Gum Drop Day. Gum drops are a type of candy, a favorite confectionery, blended with flavors, gelatins or pectins and infused with colors. After the mixture is set the candies are shaped into cones, then rolled in sugar. They are very sweet and are flavored with fruits and spices, both real and artificial. This colorful treat is also known as spice drops, and is frequently to be found in candy dishes. Cooks and pastry chefs use them for decorating cakes and cupcakes. At Christmastime they are popular additions to gingerbread houses, and are considered a traditional confection for the winter holidays.

Other popular flavors and shapes are orange slices and spearmint slices. Another variation taught in French culinary schools, is Pâtes de fruits, or fruit jellies. These are usually set up in a hotel pan and then cut into squares and coated by being tossed in sugar. Gummy bears and other childish shapes are another style of this candy. Sometimes their flavors are so good they are truly irresistible.

Today is Almond Day. Surprisingly the almond fruit is not a nut but a drupe. Its flesh or seed is what we know as the almond. It comes from a tree which flowers and then the pod (drupe) grows and deep inside is where these tasty morsels can be found. There is an amazing amount of interesting data to be found about this food and it is also very versatile.

Almonds can be eaten raw, blanched, toasted, slivered, sliced, kept whole, smoked, salted, honey-roasted, ground into flour, used in frangipane or marzipane, made into oils and used many other ways. You’ll have to do a little research to see how extensively this almond fruit is used around the world. It’s amazing.

For all you coffee lovers tomorrow is Cafe Au Lait Day! It is coffee made with steaming milk, unlike a white coffee, which is prepared with cold or room temperature milk. It can be made into a stronger version by using pressed French coffee, or dark espresso, and sometimes this is referred to as caffè latte. Whichever way you prefer your cup of joe, tomorrow is a day of appreciation for this tasty beverage, no matter how it’s brewed.
